Blanc De Canet

Harvest week 2 of September. An early harvest to maintain a low alcohol content and fruity freshness. Hand-picked in 15kg crates, with thorough selection during picking. After picking, the grapes were macerated for 48 hours and cooled to 0°C. We harvested approx. 4000kg, good for 2500L.

Single-varietal Sauvignon Blanc

We picked these grapes ourselves in a 6-hectare Sauvignon Blanc vineyard in San Rafael Del Rio, about 10 km from our bodega. The vineyard is situated slightly lower than our own vineyards, in a gentle valley. The subsoil is again sandy loam, but here with an extreme amount of rock.

We pick on the day that is ideal for us, then the harvesting machine finishes the job a week or more later. 10 men toil all day for 4,000 kg; we select strictly, and the machine “grazes” the rest in one day: 70,000 kg.

This Sauvignon Blanc first macerated for 48 hours at a temperature of 0°C. Subsequently, the grapes were destemmed and pressed in a horizontal pneumatic press, with the addition of dry ice to prevent oxidation. The juice fermented in stainless steel fermentation tanks at a low temperature (15°C) for 30 days, including post-maceration. After this, we allowed the wine to age “sur lie” for 5 months. This is followed by clarification and filtration using 3.1 and 0.45 micron filters.

In the glass

This wine is pure and brilliant, light straw-colored.
The scent is of medium intensity, citrus fruit predominates, with floral and spicy aromas.
This is a light wine, pleasant on the palate, with fine acidity and aromas of citrus fruit and flowers.

This single-varietal received 92/100 points, Concurso Akatavino.
