Monovarietal Garnacha Blanca
Our Maxim is hand-harvested in 13 kg crates, with careful selection during picking. After harvest, the grapes are cooled to 0°C.
Monovarietal Garnacha Blanca
These grapes come from our Ermita vineyard, planted in 2021. The soil consists of sandy loam with light stone influence.
This Garnacha Blanca first underwent a 48-hour maceration at 0°C. The grapes were then destemmed, with part of the harvest undergoing additional skin maceration, while another part was pressed immediately.
Pressing was carried out using a horizontal pneumatic press, with the addition of dry ice to minimise oxidation. The juice fermented in stainless steel tanks at a low temperature of 15°C for 30 days, including post-maceration. Around 40% of the wine fermented in concrete tanks.
The wine was then aged “sur lie” for five months in stainless steel tanks, followed by clarification and filtration using 3, 1, and 0.45 micron filters.
In the glass
This wine is clear and bright, with a pale straw-yellow colour.
The nose shows good intensity, with notes of apple and pear alongside tropical fruit such as pineapple and mango.
A refined wine with light viscosity, balanced freshness, and lively acidity.
