Pinot Noir

Our Pinot Noir is harvested during the first week of September 2024. An early harvest to preserve low alcohol levels and fresh fruit character.

The grapes were hand-picked into 14 kg crates, with careful selection during harvest. After picking, the grapes underwent a 24-hour maceration and were cooled to 0°C.

Monovarietal Pinot Noir

Finca Avila is a small vineyard of around 4,000 m², located just a few kilometres from the coast. The vineyard was planted around 10 years ago, and the vines are now reaching their full potential.

The soil consists of sandy loam with a high stone content, while the vineyard itself is well protected by surrounding vegetation. This also brings challenges, as birds and wild boar are particularly fond of the grapes. In 2025, no harvest was taken from the vineyard.

This Pinot Noir fermented very slowly at a low temperature of around 20°C, following destemming and a 48-hour cold maceration. After fermentation, the must remained in contact with the skins for a further five days before pressing, making a total maceration period of 14 days.

Pressing was carried out gently, with a maximum pressure of 1.5 bar. After pressing, the wine rested for five months in concrete tanks. The wine was naturally stabilised and only lightly filtered (5 and 3 micron).

This wine meets all the requirements of the IGP Castellón appellation.

In the glass

This wine is beautifully clear, with a light cherry-red colour.

The nose is fresh and fruit-driven, with cherry aromas taking the lead.

A light and elegant wine, with soft acidity, delicate fruit character, and a distinctive minerality.

This Pinot Noir received 92/100 points from the blind tasters of Guía Verema, Valencia.
